Dinner tonight

I have a favorite comfort/college food.  It is very simple (and many of my readers may have had it before) and only takes one pan.  Simple ingredients, fast prep and easy cleanup.  It fits my bill.

Ok, here we go:

Faux omelet

2 eggs
1 medium handful of cheese (any cheese; cheddar is good… whatever you use, make sure it’s grated)
Veggies (if you have them; onions, green pepper… anything)
Spritz of Pam (or some other spray-able cooking oil; not the flavored stuff though)
Ketchup/marinara sauce/tomato sauce (anything tomato-y would work; I used a container of leftover Arby’s marinara sauce we had in the cupboard)
Salt and Pepper

  1. Spritz your pan with the cooking spray.
  2. Heat pan.
  3. Crack both eggs into pan.
  4. Add veggies.
  5. Add cheese.
  6. Stir until egg is cooked mostly through.
  7. Salt and pepper to taste
  8. Serve with tomato sauce-y product.

Serves one.

Good for any meal where you’re uninspired and have a couple eggs on hand.  Add bread if you’re really hungry.

So simple, and when paired with fruit that’s in season (I had an orange), pretty healthy.  Hot tea is good to drink with this as well.

The marinara sauce I had with it added something.  Not really sure what, but it was good.  I think it had something to do with the garlic and spices in the sauce.  Either way, it hit the spot.

    Note for eggs: always add the salt last, because during the cooking process, salt can break down the emulsification process and lead to dry-tasting eggs.
